A Fruity Dressing

A good friend of mine has some of the most severe dietary restrictions of anyone I’ve ever met. Over the past couple years, I have only managed to successfully feed her once. Her food allergies and sensitivities are many, and at our latest function, I embraced the challenge of creating something yummy within her tummy’s boundaries. A fruit salad to bring to a potluck, but not just any fruit salad…

I love to embellish the ordinary. Oftentimes, a fruit salad is presented as just that- an assortment of fruit. But why not create a dressing to play off of the sweetness of the produce? A nice, creamy avocado, blended with some lemon verbena-infused ACV, a dollop of rosemary honey, and some kombucha… refrigerated overnight with some orange zest and fresh rosemary… I’m totally salivating! Tossed in a bowl to mingle with the strawberries, raspberries and blueberries, it was a perfect play. Even better when I see my sweet friend enjoying a bowl! xo
